What's happening is the sugar starts to crystallize and turn white.  Sometimes if you continue to heat and stir the nuts, they will clear up a bit.  You should be able to stir a few times before the sugar starts to change.  Just pour out on a foil, greased cookie sheet and wait to cool.  Break apart and enjoy.  
The other method I would suggest would involve sugar and egg whites and baking them.   Google for a recipe so you get your proportions right.
